Of all Rajasthani food, Dal Baati Churma is the most popular dish, sublimely harmonising the rich tastes of sweet and savoury. It is commonly served on special occasions such as weddings, parties and religious festivities. Consisting of lentils (dal), baked or grilled unleavened wheat flour bread (baati) and a sweet delicacy made with sugar, dried fruits and wheat flour (churma), it is also served with a condiment of spicy garlic chutney. The traditional way of serving the baati in Dal Baati Churma is to coarsely mash it and pour clarified butter (ghee) over it. The baati can be eaten plain or filled with onions, peas or a mixture of ground pulses and cereals known as sattu. Rajasthani food, Ker Sangri, is a traditional dish of the ethnic Marwari community. Consisting of dried wild berries and beans, Ker Sangri is brimming with a piquant, tangy flavour. Ker is a berry that grows accustomed to the climate of the Thar Desert, India’s largest desert that spans across Rajasthan, Gujarat and Haryana. Sangri, or sangar, is the local name for the beans of the Khejri tree, or ‘Loong Tree’, also native to the Thar Desert. A traditional snack of the ethnic Marwaris, gatta is a dumpling made of besan flour, also known as gram flour, which is essentially ground chickpeas. The snack can be enjoyed steamed or fried, cooked in an aromatic chilli, coriander and tumeric spices. Gatta dumplings are also delightful when eaten in a traditional Rajasthani curry. The medley of Indian spices cooked in a yoghurt based sauce, and paired with besan flour, give Gatta Curry its exotic nutty flavour. Gatta Curry is also exceptional when eaten with Indian flat breads such as roti, puri and chapatti, or steamed rice.
